Coffee Cake Pancakes

Coffee Cake Pancakes (from A Little Bit Crunchy A Little Bit Rock and Roll)

Streusel topping:

1 1/4 cup flour

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 cup brown sugar

1/4 teaspoon salt

1/2 cup softened butter

1/2 cup chopped pecans

Beat all but pecans on low speed until it resembles wet sand.  Stir in the pecans.  Press the mixture together in your hands to create clumps.  Bake in a pre heated 350F oven for 20-25 minutes.  Break up any really large clumps and ool.

Pour pancake batter onto a hot griddle and sprinkle streusel topping into pancake. When pancake begins to bubble and set up on the sides- flip.

Top with more streusel and a powder sugar glaze. (Powder sugar thinned with water.)
