Chickpea Croquettes

Chickpea Croquettes

1 cup whole wheat flour

3/4 cup hot water

juice of 1/2 a lemon

1 1/2 teaspoons salt

2 teaspoons cumin

1 cup dried chickpeas, soaked and cooked (or 15 oz can rinsed and drained)

4 chopped green onions

1/2 a red pepper, chopped

1 jalapeno, minced

3 cloves garlic, minced

2 tablespoons cilantro, minced

3 tablespoons olive oil


In a bowl mix the water, lemon juice, cumin, and salt.  Stir in the chickpeas, scallions, red pepper, jalapeno, garlic, and cilantro.


Heat the olive oil over medium heat in a large saucepan.  With your fingers, or an ice cream scoop, form the mixture into 8 patties, about 1/2 inch thick. Place in the pan and cook 4 to 5 minutes per side.  


Serve with homemade salsa, avocado or sour cream.  I also like to serve these over a bed of baby spinach or wild greens.
