Basic Buttermilk Pancakes with Cornmeal

Basic Buttermilk Pancakes with Cornmeal: (from A Little Bit Crunchy A Little Bit Rock and Roll)

2 cups flour

1/2 cup cornmeal

2 teaspoons sugar

2 teaspoons baking powder

1 teaspoon salt

2 1/4 cup buttermilk

2 eggs

4 tablespoons melted butter, cooled

Mix the dry ingredients together and stir with a whisk.  Mix the wet ingredients together with a whisk.  Mix together and stir just until flour is incorporated.  DO NOT OVER MIX.
