100% Whole Wheat Pancakes

Whole Wheat Buttermilk Pancakes (from A Little Bit Crunchy A Little Bit Rock and Roll)

2 cups whole wheat flour

1/2 cup corn meal

2 teaspoons sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

2 1/4 cups buttermilk

2 eggs (separated)

3-4 tablespoons melted butter, slightly cooled

Separate 2 egg whites and set aside.  Add the remaining yolks to the buttermilk and melted butter.  Whisk this and set aside.

In a large bowl whisk together the flour, cornmeal, sugar, baking powder, baking soda and salt.

Add the liquids to the dry and stir just until combined. DO NOT OVER STIR.

Meanwhile, beat the egg whites until soft peaks form.  Gently fold the egg whites into the pancake batter.

Pour the batter onto a preheated greased skillet.  Flip the pancake just when you begin to see bubbles forming on the surface.
