INGREDIENTI: x 6 persone 2 melanzane lunghe 250 gr di salsiccia di maiale 200 gr di formaggio bitto 15 rettangoli di sfoglia fresca agli spinaci 1/2 cipolla bianca 50 gr di burro per la besciamella + un poco per la gratinutura 50 gr di farina 00 500 ml di latte olio extravergine d'oliva 1 rametto di rosmarino un goccio di vino bianco noce moscata sale q.b. PREPARAZIONE: Lavate le melanzane e tagliatele, dal lato corto, a fette sottili circa 5 mm. Salatele leggermente e lasciatele spurgare per 10 minuti. Tamponatele con carta da cucina, scaldate una bistecchiera e grigliatele su entrambi i lati. In una padella fate soffriggere un po' di cipolla bianca con 2 cucchiai di olio e un rametto di rosmarino. Aggiungete la salsiccia tagliata a piccoli pezzetti e fatela rosolare per 10 minuti. Sfumate con un goccio di vino e levate dal fuoco. Preparate una besciamella in modo classico facendo il roux con circa 50 gr di farina e 50 di burro e aggiungendo circa 500 ml. di latte caldo. Fate cuocere fino ad addensare. Unite quindi un pizzico di sale e di noce moscata. Togliete la crosta al formaggio e grattugiatelo con una grattugia a fori larghi. Prendete una teglia abbastanza grande e sporcatene il fondo con qualche cucchiaio di besciamella. Disponete le sfoglie di pasta (3 per strato), che avrete precedentemente lessato in acqua per circa 4-5 minuti, e incominciate a farcire la lasagna mettendo in ogni strato qualche fetta di melanzana grigliata, un po' di salsiccia, due cucchiai di formaggio bitto grattugiato e 4-5 cucchiai di besciamella. Sovrapponete un secondo strato di pasta e continuate con il ripieno fino a chiudere l'ultimo strato solo con la pasta e la besciamella. Distribuite sulla superficie qualche fiocco di burro ed infornate a 200° per circa 20-25 minuti. Gli ultimi 5 minuti accendete il grill fino a doratura. ••••••••• INGREDIENTS: x 6 people 2 long eggplants 250 gramms pork sausage 200 gramms of Bitto cheese 15 rectangles of fresh pasta with spinach 1/2 white onion 50 gramms butter for the white sauce + a little to brown 50 gramms flour 00 half liter milk extra virgin olive oil 1 sprig of rosemary a dash of white wine nutmeg salt PREPARATION: Wash the eggplants and cut from the short side, into thin slices. In a pan fry a bit of white onion with 2 tablespoons of oil and a sprig of rosemary. Add the sausage, cut into small pieces and cook for 10 minutes. Add the wine and remove from heat. Prepare a bechamel sauce: make the roux with 50 grams of flour and butter and add warm milk. Cook until thicken. Add a pinch of salt and nutmeg. Remove the rind to the cheese and grate it. Take a baking dish large enough, put to the bottom few spoonfuls of bechamel. Place the sheets of pasta (3 per layer), previously boiled in water for about 4-5 minutes, and start stuffing the lasagna. Put in each layer a few slices of grilled eggplant, a bit of sausage, two tablespoons of Bitto cheese and 4-5 tablespoons of bechamel. Overlaying a second layer of dough with the filling and continue until you close the top layer only with the pasta . Distribute on the surface the remaining bechamel and a few flakes of butter. Bake at 200 ° C for about 20-25 minutes. The last 5 minutes turn on the grill until the surface is golden brown.

Spaghetti is a quick and tasty dish to make. This is how my mom makes her spaghetti. (Note: I added that parsley to make this picture prettier. Though I did eat it with the spaghetti and it was very delicious.) Recipe Brown 1/2 pound of ground beef. Add salt, pepper, and two heaping tablespoons of minced garlic. Finely chop 1/2 a yellow onion and add. Cook until onion is transparent. Get your favorite brand of spaghetti sauce and add it to the meat and let it simmer a bit. Taste the sauce. If too sour, add a little bit of sugar until it is just right. Optionally you can add chopped tomato and mushrooms. For the spaghetti noodles, boil water with a little bit of oil in it. Add noodles when water begins to boil. Cook noodles until they are soft enough for your tastes. Drain the water. Easy peazy.
