3 Tier Wedding Cake
3 Tier Wedding Cake
This is my first ever three tier cake. I baked it as a wedding present for some friends who got married at the weekend. The first (bottom) layer is a matured fruit cake that was made three months ago, the middle is a chocolate sponge with chocolate buttercream and the top layer a vanilla sponge with buttercream and raspberry jam. The cakes are covered with sugarpaste (rolled fondant) icing before being decorated with modelling paste. I make up batches of colour on an individual basis for each cake therfore giving a unique finish even if following an existing design. The colour scheme for this particular cake was based on the Wedding dress, the Bridesmaids dresses, flowers from the garden where the reception was held and some Autumnal tones. The design, although inspired by contemporary designs by bakers such as Debbie Brown and Lindy Smith, was a one off design of my own. I wanted to create a cake which was both traditional and contemporary at the same time, to this end I used a traditional shape and a set of classic pillars to give more height but used bright vibrant colours and a basic modern design.
