Susie's Bread Bowls

From the Kitchen of my sister Susie

1 1/2 c. warm water
2 T. yeast
1 T. sugar
3 1/2 - 4 1/2 c. bread flour {start with 3 1/2 c. and add more as needed to form dough}
1 t. salt

Combine water, yeast and sugar. Let sit 5 minutes to proof. Add flour and salt. Knead 10 minutes in stand mixer. Let the dough rest for 30 minutes. Divide into 6 "bowls" and place them on a greased baking sheet. Spray the dough with a water bottle and cover with a damp cloth. Let sit 15 minutes.

Bake in a 500 degree oven for 2 minutes. Spray bowls again with water and then reduce heat to 400 degrees and bake 8-15 minutes until golden brown.
