Pork Barbacoa


pork roast
1 12 oz can coke {not diet}
1/4 c. brown sugar
1-2 cloves garlic, minced
1/4 c. water
1 can chipotle chiles in adobe sauce
1 can diced green chiles
1/4 c. brown sugar
1 c. coke

Place a roast in a large zip top bag. Combine 12oz coke, 1/4 c. brown sugar, garlic and water and pour over roast. Marinate overnight.
In the morning place meat and marinade in crockpot. Cook 4 hours on high or 8 hours on low. Drain liquid, shred pork and add remaining ingredients and cook 2 more hours on low.

Serve with rice, beans, cheese and lettuce on a tortilla.
Alternately, you can make nachos with rice and bean toppings along with nacho cheese sauce.
