Healthy Applesauce Oat Breakfast Muffins

Muffin batter:

1 1/2 c. oats (I like to use 3/4 c. each rolled and quick oats)

1 1/4 c. flour

1/2 c. brown sugar

1 t. baking powder

3/4 t. baking soda

3/4 t. cinnamon

1/2 t. salt

1 c. applesauce

1/2 c. milk

3 T. vegetable oil

1 egg white

1 t. vanilla

Oat Crumble Topping:

1/2 c. oats

2 T. brown sugar

1/4 t. cinnamon

2 T. butter, melted

Mix together dry ingredients. Add the wet ingredients and stir just until mixed. Spoon into muffin tins and top with oat crumble topping. Bake at 400 for 16-18 minutes.
