Homemade Vanilla Pepita Granola


1/4 cup honey

1/4 cup  plus 1 tablespoon coconut oil, warmed until liquid

1/2 teaspoon vanilla extract

1 1/2 cup rolled oats

1/2 cup sliced almonds

1/2 cup raw cashews

1/4 cup raw brown sugar

1/2 teaspoon cinnamon

1/2 teaspoon flake sea salt

Preheat the oven to 300 degrees Fahrenheit. Mix together all of the ingredients in a large bowl. Spread the mixture out on a baking sheet lined with parchment paper. Place the pan in the oven and bake for 20 minutes. Remove it from the oven, then stir the mixture every 5 minutes on the pan the first 20 minutes as it cools. Once cooled to room temperature, transfer to an air-tight container. Will keep for 1 month.
