Mexican Rice

Serves 10 - 1/2 cup servings

1/2 cup diced onions
1 tsp minced garlic or 2 cloves
2 1/2 cups rice
3 TB Adorned From Above's Mexican Rub Recipe
1 can diced tomatoes with habanero chili peppers
1 6 oz can sliced black olives drained
2 cups chicken broth
2 cups water
1 1/2 tsp salt
1/4 tsp pepper


Saute onions until translucent, then add garlic and cook for 1 minute.

Add the mexican rub, diced tomatoes, black olives, chicken broth, water, salt, and pepper and bring to a boil.

Next, add in the rice and stir  Bring to a boil again. Cover pan, land reduce heat to a simmer.

Cook for about 20 minutes, until the liquid is absorbed.

Once done, remove from heat and serve.
