One Pot Pasta


(serves two)
300gr spaghetti
300gr cherry tomatoes
1 thinly sliced onion
2 thinly sliced garlic cloves
4 cups of vegetable broth
1 teaspoon chilly flakes
2 sprigs of fresh basil
salt and pepper
pinch of dried oregano
grated parmesan.

What next? Well that's the best part, put everything in one big pan/pot (the spaghetti has to seat flatly so  snap it if it doesn't). Throw is the stock and put to boil. 

Now, apparently you can either boil it for 10 minutes while stirring (according to Martha Stewart) or you can cover it, bring it to a boil, then simmer slowly for 5 minutes and uncover and keep simmering. According to me you do a mix... I covered it and brought it to a boil but then uncovered it and simmered it while stirring until all the water (or most of it was gone). 

Serve hot with lots and lots of grated parmesan on top.
