Scalloped Potatoes au Gratin

4-5 Large Russet Potatoes, peeled and thinly sliced

1 small onion, thinly sliced

2 c. Colby/Jack cheese, shredded

salt and pepper to taste

3/4 c. half and half

Layer potatoes and onion in bottom of casserole that has been sprayed with olive oil or cooking spray. Season with salt and pepper. Sprinkle with cheese. Repeat layers 3 or 4 times, depending on the dimension of your casserole.  Pour cream over all. Bake in a 350* oven, covered for one hour.  Uncover and continue to bake for 30-45 minutes or until top is golden brown and potatoes are fork tender.
