Potatoes au Gratin

3 c, half and half

3 lbs. russet potatoes, peeled and cut into 1/4" slices

1 T. garlic, minced

kosher salt and freshly ground pepper to taste

12 oz. med. cheddar cheese, grated


Place the half and half in a 6 qt or larger sauce pan.  Add the garlic and bring to a simmer.  Stir in the potato slices and bring to a boil, reduce heat and simmer for 10 minutes or until potatoes are fork tender.  Pour potato mixture into a casserole that has been treated with cooking spray.  Sprinkle with the shredded cheese.  Bake in a preheated 350* oven, uncovered for 45 minutes to an hour.  Casserole should be bubbly and cheese should be browned.
