Pork and Lentil Soup

1/2 large sweet onion, chopped

1 T. olive oil

4 cloves garlic, minced

1/2 t. cumin

1 bay leaf

1 t. dried thyme

1 c. red lentils

8 c. pork stock

3/4 c. pork in bite size pieces

salt and pepper to taste

Cook onion in oil with salt and pepper in a large soup pot over medium heat, stirring occasionally until softened, about 10 minutes.  Add garlic, cumin, bay leaf, thyme and cook 1 minute more.  Add lentils and broth, bring to a boil.  Reduce heat and simmer partially covered until lentils are very soft and falling apart, 30-45 minutes.  Discard the bay leaf and partially puree the soup using an immersion blender.  Add the meat and allow to heat through before serving.
