Phase 3 Muffins

2 c. almond flour

2 eggs + 2 egg whites

1/4 c. stevia

1/2 t. baking soda

1 T. apple cider vinegar

pinch of salt

1 t. vanilla

2 T. olive oil

1 c. blueberries

1 c. shredded zucchini


Place all ingredients except blueberries and zucchini in the large bowl of a stand mixer fitted with the paddle attachment.  Mix until well blended, stir in the blueberries and zucchini.  Divide between 9 muffin cups that have been lined with cupcake papers.  Bake in a preheated 350* oven for 25-30 minutes or until a skewer inserted in the center removes cleanly.
