Easy Stuffed Cabbage Casserole

1/2 lb lean ground beef

1/2 an onion, diced

3 c. shredded cabbage

1 (15 oz) can diced tomatoes with juices

1/3 c. Royal Rice Blend or 1 c. cooked rice

1/3 c. water if using Royal Rice Blend

salt and pepper to taste

Place ground beef and onions in a large skillet over med high heat.  Season with salt and pepper and cook until onions are softened and burger is crumbled and browned.  Add the cabbage and continue to cook until wilted. Add tomatoes with their juices, rice and water, if needed.  Stir to combine 

Turn into an 8" casserole or baking pan. Cover and bake in a preheated 350* oven for 25-30 minutes, until rice is cooked and casserole is heated through.
