Buttermilk Blueberry Muffins

1 3/4 c. flour

3/4 c. sugar

2 1/4 t. baking powder

1/2 t. baking soda

1/2 t. salt

1 c. buttermilk

4 T. butter, melted

1 t. lemon zest

1 egg, beaten

1 c. fresh blueberries


Mix together flour, sugar, baking powder, baking soda and salt in a large bowl.


Whisk together the buttermilk butter, lemon zest and eggs in a small bowl.


Make a well in the dry ingredients.  Pour the buttermilk mixture into the well and mix just until blended.  Fold in the blueberries.  


Divide the batter between 12 muffin tins that have been treated liberally with baking spray.  Bake in a preheated 350* oven for 20-25 minutes, until a skewer inserted removes cleanly.
