Maple Oatmeal Pie

Adapted from the Green Market Baking Book

I tweaked this recipe quite a bit from the original by adding in the maple syrup and subtracting the nuts, although if you want to sprinkle some crushed nuts over the top of the pie before you bake it I think the crunch would be a nice texture to add in. The maple syrup is an absolute must though - please don't leave it out.

1 unbaked pie shell
¼ cup butter
1 cup honey
¼ cup maple syrup
½ teaspoon cinnamon
½ teaspoon vanilla extract
¼ teaspoon salt
3 eggs
1 cup uncooked oatmeal

Preheat the oven to 350 degrees F.

Cream the butter in a large bowl. Continue beating and slowly add in the honey. Add the cinnamon, vanilla and salt. Beat in the eggs one at a time until everything is combined. Stir in the oatmeal and pour the mixture into the pie shell.

Bake for 50 minutes or until the pie is set.
