Ginger Molasses Quinoa Cookies

1 ½ cups all-purpose flour
¾ cup quinoa
2 teaspoons ground ginger
1 teaspoon baking soda
½ teaspoon cinnamon
½ teaspoon cloves
1/8 teaspoon salt
¾ cup butter, softened
1 cup sugar +1/3 cup for dusting
1 egg
¼ cup molasses

Preheat the oven to 350 degrees F.

Grind the quinoa in a food processor until it becomes a fine powder. If there are still some larger  pieces of quinoa that’s okay – it’ll add some crunch!

In a medium bowl, combine the quinoa powder, flour, ginger, baking soda, cinnamon, cloves and salt. In a large mixing bowl beat together the butter, sugar, molasses and egg until combined. Beat in the as much of the flour mixture as you can with the mixer. Stir in the rest of the flour. Scoop up heaping tablespoons of the dough and roll into balls. Roll the balls in the extra sugar and place on a greased baking sheet.

Bake for 11 to 13 minutes or until the bottoms are lightly browned. Cool on a cookie sheet for 2 minutes and then transfer to a wire rack to cool.
