Place 1/4 c. of freshly squeezed and strained lime juice in a small bowl. Smash a fat clove of garlic to a purée with a pinch of salt and add it to the bowl. Let sit for five to ten minutes (to allow the flavor of the garlic to mellow a bit). Add a teaspoon of cumin and salt & pepper to taste. Add 6 T. of olive oil in a thin stream while whisking constantly. Taste and add salt and pepper as necessary. The vinaigrette will keep easily for a week or two in the fridge. Bring to room temperature and re-whisk before using.
