Fruity Oatmeal Slice

125g butter, chopped
1/3 cup (70g) firmly packed brown sugar
2 tbsp honey (I used orange blossom)
1/2 cup (75g) plain flour
1 tsp baking powder
1 1/2 cups (135g) rolled oats
1 cup (130g) sultanas
1 cup (140g) raw almonds

Preheat oven to 170C (150C fan forced)

Line a slice tin (approx 20 x 30cm) with baking paper, extending the paper a few centimetres over the two long ends of the tin. Combine butter, sugar and honey in a small saucepan, and stir over low heat until the butter has melted and it is all combined.

Sift flour and baking powder into a mixing bowl and stir to make sure the baking powder is spread evenly through the flour. Add the oats, sultanas and almonds and mix to combine. Pour in the butter mixture and stir gently until it is all combined. Spread mixture evenly into tin and press down with the back of a spoon to make it nice and firm.

Bake slice for about 20 minutes until nice and golden on top. Cool in tin and then cut into slices.
 
Makes 12 - 24 pieces depending on how big you like to cut them.
