Sweet Onion Pudding

6-7 medium sweet onions, peeled and sliced thin

1/4 c. butter

6 eggs, lightly beaten

2 c. fresh, soft bread crumbs

3 tbsp flour

2 tbsp sugar

2 tsp baking powder

2 c. heavy cream

5 oz shredded Parmesan Cheese

melt butter in a saute pan and add onions, cooking on medium low until they become soft and golden in color

about 30-45 minutes -- this step can be done up to two days before hand - just keep in an airtight container in the fridge until needed

mix eggs, cream and cheese together, then add the dry ingredients until well blended, then add onions

either pour into a greased slow cooker and cook on low for 4-4 1/2 hours until the center is set

-- you could also  pour into a greased baking dish and bake at 350 for 30 minutes, or until the center is set
