Our staff training course is in full swing right now. Not only do the YSE team have to practise cooking and cleaning to our normal standards, they also have to hone essential skills like building a decent snowman. The snowperson in question seems to be dreaming of a white Christmas, which reminds us that three of our twenty-six chalets and a few rooms here and there are still available for the week of 21-28 December. Not many people can choose this late to make a Yuletide break for Val d'Isere, but if you are fed up with the hype, have had enough of the recession, or can't face another week with the relations, you might like to know that our last chalets (Jasmine for 6, La Roche for 8 and La Moraine for 10) are now up for grabs at savings which will more than cover the cost of the roses for Mother-in-Law or cigars for Uncle Basil. The YSE staff training course is in full swing in Val d'Isere, and while the chalet assistants practise cleaning with nail brushes, toothbrushes and even toothpicks, our chefs and chalet girls are honing their skills in haute cuisine: cooking at 1850m. Yesterday was fillet of beef day. Most of it was ruddy and bloody and rare, of course - delicious to eat but a tad gruesome to find in full colour on your computer screen on a Monday morning - so here's a plate which shouldn't offend anyone, except perhaps members of the League for Penal Reform (a bottle of bubbly on the next YSE holiday of the first person to work that one out...).
