4/365 Spicy Pumpkin Cookies
Baking the most delicious cookies for Thanksgiving tomorrow. It's one of my mom's recipes. Spicy Pumpkin Cookies: 1 c. shortening 1 c. sugar 1 c. canned pumpkin 1 egg 2 c. flour 1 T. pumpkin pie spice (although I just used a mixture of cinnamon, cloves, and nutmeg and they came out fine) 1/2 t. baking powder 1/4 t. baking soda 1. In extra large bowl , beat together shortening and sugar with electric mixer till fluffy. Add pumpkin and egg; beat till combined. 2. In another bowl combine flour, spice, baking powder and soda. Beat into pumpkin mixture until combined. 3. Spoon by rounded teaspoons onto ungreased cookie sheet. Bake @ 375 degrees for 8-10 minutes or until the tops seems firm. Cookie glaze: In a medium saucepan combine 1/2 c. packed brown sugar, 3 T. margarine, and 1 T. milk. Heat over medium heat till margarine melts, stir occasionally. Remove from heat. Stir in 1 c. sifted powdered sugar and 1 t. vanilla. Spread over cookies, top with nuts.
