PER SERVING (about 1 cup): 172 calories, 3.5g fat, 790mg sodium, 22.5g carbs, 5.5g fiber, 6.5g sugars, 13g protein Points Plus is 4 HG Heads Up! This recipe is crazy-spicy (in a very good way!). But if you like a little less heat, only use 2 chipotle peppers... Ingredients: 1 lb. raw lean ground turkey One 29-oz. can tomato sauce One 14.5-oz. can diced tomatoes, drained One 15-oz. can chili beans (pinto beans in chili sauce), undrained One 15-oz. can red kidney beans, drained and rinsed 3/4 cup canned sweet corn, drained 4 - 5 canned chipotle peppers in adobo sauce, chopped, sauce reserved 2 bell peppers (in different colors), chopped 1 large onion, chopped 2 carrots, chopped 2 tsp. minced garlic 2 tsp. Worcestershire sauce 1 tsp. chili powder 1 tsp. ground cumin 1/2 oz. VERY dark chocolate (70%+ cacao), broken into small pieces salt, to taste Optional topping: fat-free sour cream Directions: Bring a large pan sprayed with nonstick spray to medium heat on the stove. Add turkey and spread it around in the pan to break it up a bit. Cook and crumble until meat is brown and cooked through, about 6 minutes. Drain any fat or liquid, and then transfer turkey to the crock pot. Add all other ingredients except for the chocolate to the crock pot. Add 1 tbsp. adobo sauce (from the canned chipotles). Mix well to combine. Cover and cook on high for 2 hours, and then reduce heat to low and cook for an additional 3 hours. (OR cover and cook on low for 6 - 7 hours straight.) Add chocolate and stir until pieces melt and disappear into chili. Cover and cook for 1 hour longer on low. Add salt to taste. If you like, top each serving with a little sour cream. Mmmmm!!! MAKES 12 SERVINGS Allie's Notes: I modified the recipe a bit...I don't like cooked carrots, so I used the whole can of corn instead. I used 12 oz bags each of frozen peppers and onions. Our store didn't have chili beans or chipotle peppers, so I used pinto beans, drained the beans but not the tomatoes, adobo seasoning, and chipotle tabasco and then put out the tabasco with the chili.

OK, now that Spring is here, it's time to start making some meals that are healthy (meaning low in calories, filling, high in protien and flavor), afterall, the bathing suits will be coming out soon. I like to experiment with many different ingredients and have been thinking about this dish for several weeks. I had to wait for fresh basil, for some reason that's very difficult for us to find during the winter here in Chicago. Here's the recipe: Ingredients 2 Tbsp extra-virgin olive oil 1 lb bonless, skinless chicken breast cut into bite sized pieces 9 oz. of fresh fettucini pasta, I like Buitoni, but you can use any kind you prefer (if not fresh, you need to cook it al dente first - about 9 1/2 minutes) 1 C fresh spinach, chopped 1/2 c fresh basil, finely chopped 1 sprig of rosemary, finely chopped 1 clove garlic, chopped 2 C of Healthy Choice Traditional spaghetti sauce (or 1/2 can of diced canned tomatoes) 4 eggs 2/3 cups reduced fat shredded cheese (colby/jack worked well) 2 Tbsp. grated Romano cheese 1 Tbsp. Mascarpone cheese. 1 tsp. salt 1 tsp. pepper Preaparation Preheat oven to 375 F Heat the oil in a large, nonstick, ovenproof skillet on the stove. Add chicken and brown for 6 minutes. In a large bowl, mix together the pasta, spinach, basil, rosemary, spaghetti sauce, salt, pepper, eggs and shredded cheese. Add garlic and Mascarpone cheese to chicken. Continue to saute for 1-2 minutes. Add the egg and pasta mixture to the skillet and cook over medium heat for 5 minutes. Sprinkle the dish with the Romano cheese. Place the oven-proof skillet in the oven for 13 minutes, or until the dish is firm like a casserole. Serves 4. Per serving 475 cal, 41 g. protien, 29 g. carb, 23 g. fat, 3 g. fiber, 760 g. sodium
