There used to be more bottles of wine in this cellar, but they started to disappear. Funny thing about cork screws! A poem from 2009 . . . Tending Cellar As bottles age I pull them from the cellar And their slots One at a time To be uncorked Upstairs Decanted And savored before they turn Sour Too old for anything much But the drain No wine before It is time No bottle opened Too young Left to rest Below Where it is cool No old stuff Turned bad Vinegared Acetic Age is not always a virtue As wine turns And lives sour I no longer buy serious wines The ones that must linger A decade Laying on their sides Collecting dust As raw intensity Almost harsh Softens into grace I am more aware of Time How much is left And how many bottles One man Late in life Might open And enjoy The wooden racks Once groaning And proud Weighted down by hundreds Of serious bottles Costly baubles And impressive labels Seem unconcerned now Turning a blind eye On each withdrawal As if there is no grief And no loss Involved Can I measure the time left me By these empty slots Or should I count the full ones? If I buy new cases And young bottles To fill the empty slots Will Time wait Grant me an extension Allow me ten more years Before uncorking? No wine before it is time? I found a group called "52 bottles of wine" the other day. I thought it infinitely more inspiring than a 365, so i've decided to give it a go. But I will not force it to one bottle a week. This project will follow my natural rythm. The first wine is a "Marques de Monistrol - Castillo del Elizal 2007" that i won by buying 50NOK worth of lottery tickets. That means i got it for 30NOK less than retail price in Norway... It's a Cabernet-Garnacha blend from Spain. We put a splosh of it in our soup, had a small taste and that decided it was not bad, but entirely OK to use in a Mulled Wine. It also did remarkably well in a 50/50 wine/ginger ale mix... The Mulled Wine recipe was inspired by numerous recipes online, and then adapted the way i thought best: The juice from one orange and two clementines is put in a casserole, with equal amounts of water. Add sugar (<1dl), add four cinnamon sticks, 4 star anises and a teaspoon of cloves. Boil it all up, and let it simmer/boil for about 5 minutes. Now add the wine and heat to 65C. We used a meat thermometer to measure the temperature. Serve in glasses to enjoy the color! © Jarle Vikor Ekanger
