This delectable spread is a favorite in France. Made by cooking the chestnuts with sugar and vanilla, it is excellent on toast.
And because of its thick and smooth texture, it also goes well with ice cream or yogurt.
Some use it in place of chestnut puree to make a Mont Blanc (French dessert made of pureed chestnuts and whipped cream, often on a meringue base).
Of course, you may also find yourself eating it straight from the jar!
Once widespread in France, chestnut trees, or chataigniers, are now becoming scarce as land has been given over to more profitable crops like grapes. Today the number of regions producing chestnuts has dwindled - Ardeche, Corsica, and Limousin are now the principal producers of chestnuts.

...roastin on an open fire. Although no snow here, it is getting colder. Time for some raosted chestnuts. For SLW: Reflection: there is not much of a reflection to be seen on the chestnuts or candle holder here, but enough to get you the impression of candles and to set the mood. And although the main light source is a window on right, it has still that warm color effect. I like the reflection of candle light in this one, but I'm not that satisfied with the overall composition. Maybe the front is a bit too crowdy and the photo is a bit two-parted, brown in front, green in back. But at last it was a fun shot to get that Christmas feeling into the photo. And I couldn't resist to do it, because in the back the "Christmas Song" was playing: Chestnuts roasting on an open fire...
