Last year I was diagnosed with Type 2 diabetes. Not something I wanted to hear at all. My blood sugar was 105, which is not too bad, just a bit higher than normal. I told my doctor I was not going to give my self any kinds of shots, so don’t even suggest that to me. She laughed, and then said no, no, you don’t have to do that, nor do you have to take any pills as long as you start eating the proper foods and loose a few pounds starting now. OK, I thought, that is not so hard. She told me no more cokes, chocolate shakes, junk food, etc. She also said I could eat pasta, but a small amount. I love pasta, I love shakes and coke. She told me now and then is OK on that stuff, but only now and then. I was beside myself and wondered what can I eat now. I started looking through books, web sites and talking to other people who have diabetes. I have found there are a lot of substitutes out there that are just as good. Wheat bread, wheat pasta, brown rice, low fat desserts, they are out there. So I started collecting information and recipes. Soon I started creating my own recipes based on the information I had gathered. This book is the culmination of my efforts. There are 143 diabetic friendly recipes, including main dishes, soups, stews, salads, casseroles, snacks, and desserts. It’s not really so bad I am finding, just watch that weight, and what you eat, and lots of regular exercise will help keep your blood sugar down. Give it a try, you won’t be sorry.

I babysit kids. This is great since it allows for a pretty flexible work schedule which is awesome because I'm a college student. Can anyone guess why else it's great? Yup! Me loving the Disney Channel is not weird...it's an advantage :) It makes it even easier to connect with kids if you genuinely like the same things they like and it will also make you a mini celebrity and earn you the title of "the awesome Disney babysitter" (No kidding! all the kiddies in the neighborhood of the kid I babysit, call me that! LOL) Another thing that got my attention was when "my" kids came home with Silly Bandz....these are silicone bands that snap back into shape when you take them off. what shape, you ask? ANY shape you can think of. Cars, musical instruments, animals, etc Apparently these things went viral at preschool, elementary, and middle schools in the US about a couple of months ago and my mom (who's in Europe currently) said "oooh that's what that is. I have seen 18 yr olds wear them downtown) so there you have it. a crazy silly (LOL) fad that is very fun though. I chose to take a pic of these not just because I like the colors and the fact that my tiny wrists come in handy because all those silly bandz actually fit (remember they are marketed towards preschool, elementary school/middle school kids here LOL) but also because when you look at these bands on my wrist you cannot tell what shape they really are. is the orange one a car or a guitar? the green one a dinosaur or a shark? the connection? when you look at me, you can see my hair color, eye color, clothes I'm wearing, but you do NOT see what's inside. What (or who) I really am. You can't tell that I play guitar, love palm trees, or am a T1 diabetic. Nope :) with the silly bandz you have to take your time to take them off and let them snap into shape...with me...well please don't take my clothes off to have me snap into shape and find out who I am LOL but you get the point :) Yay for: silly bandz Yay for: my date in 1 hour with Chad Dylan Cooper, Sonny Monroe, and my Brothers of Jonas. Good food doesn't have to be brain surgery. And it doesn't have to involve complicated procedures and ingredients. This recipe for a Thai marinade is adapted from Cristeen's recipe for a rib marinade, found on a low-carb food forum. Don't let my long windedness fool you; this is cheap and easy. Throw the ingredients into a blender, marinate the meat in it, cook, and voila! Cristeen's Coconut Barbecue Chicken Ingredients 1 C coconut milk 1/4 C soy sauce 1/2 t molasses 6 T sweetener (sugar or Splenda or a combination of Xylitol and Splenda) 2 stalks lemon grass, chopped (or sub a squirt of lime juice) 1/3 C shallots (or onion) 1/2 C packed cilantro, stems and all (no substitutions!) 2 T chopped garlic 2 T grated ginger (I omit this) 1 t salt 4 lbs. meat (chicken and ribs work especially well) Instructions 1. Mix everything in a blender or food processor. 2. Marinate the meat as long as possible (all day or overnight). Or not. 3. Scrape all the marinade off the meat before baking. 4. Bake at 350° for just under normal cooking time (20 min. side for ribs or 10 min. side for small pieces of chicken). 5. Meanwhile, strain solids from marinade, and simmer the liquid for a few minutes. 6. Pour some marinade over meat, then broil a few minutes until done. Serve with some side marinade for dipping. This is delicious with any vegetable, though I always recommend Brussels sprouts (nothing to do with the fact that they share Bob Schneider's initials).
