I think this is the thrid set of Luau cookies I've made this summer. =) These are just going to be out on a tray as dessert (along with cupcakes by me), so I made them more "grab and go" sized, versus larger "favor" sized cookies. The little pineapples are about 2 1/2 inches tall. I made about 80 cookies total. These are for a Luau party some good friends of our host every year. This will be our sixth year attending. It's always a ton of fun. The hosts go all out with decorations, frozen drinks, DJ... all set in their lush and beautiful backyard.
