Today's lab class was Chinese cooking, and we made a very spicy braised eggplant dish with pork strips. Your average szechuan dish, that includes foods like Ma Po Tofu and Twice-fried Pork, basically contain the same ingredients: garlic, ginger, scallions, spicy bean paste, wine, sweet rice wine, sugar and soy sauce. Cooked up red, spicy and oily. What makes this Yui-Xiang (fish-aroma) style eggplant different is that originally hot peppers pickled in a fish-brine was used to impart a fishy-flavor to the dish. Because they are hard to come by in Japan, we didn't use pickled peppers, but I guess the name stuck. I made mine with extra-hearty flavoring: going heavy on the sugar and thus soy sauce as well, to balance the flavors (important). Not to brag but I believe I had the best tasting outcome of the entire section. Most of the students are afraid to stray from the ''pre-determined'' recipe amounts which were on the light and insipid side. Unfortunately, Chinese cooking is less about recipe amounts and more about actual tasting and instinct. (it pays to grow up with Chinese parents who are picky and noisy about their food).
