Whoopin' up some pasta sauce tonight. Gonna boil a pound of pasta in a minute to mix it up with once it's done simmering. Should make lunch for a couple days. :) Before I would have made meatballs on the side or something, but now that I'm a bachelor again the browned ground beef is going into the sauce too, mMmm.. What's In it? 28oz can organic crushed tomatoes 14.5oz can organic diced tomatoes 1 small onion 1 zucchini 1 green pepper 4 garlic cloves Some chopped up jalapeno pepper 2tsp Italian seasoning (basil, oregano, etc..) Some chopped up fresh parsley Pinch of salt and ground pepper

I'm still stuffed from NYE so it's Pasta Day, today. A light Garlic and Herb sauce: 1/4 stick butter 1/5 c. flour 1/2 c. milk 1/2 to 1 c. sour cream 1 jar marinated artichoke hearts 1/2 pkg. herb and garlic mix (Good Seasons) 1 1/2 c. cooked chicken Melt butter in large skillet; add flour (medium heat) until it bubbles. Add milk and let thicken. Add dressing mix, artichoke hearts, and chicken. Boil water and cook pasta. Add sour cream to sauce (low heat, do not boil). Drain pasta and add to sauce. Healthy and very, very, good.
