toasted brown sugar oatmeal cake



1 ½ cups boiling water

1 cup quick oatmeal

1/2 cup butter (room temperature)

1 cup brown sugar

1 cup sugar

2 eggs

1 ½ cups sifted flour

1 tsp baking soda

1 tsp cinnamon

1 tsp nutmeg

½ tsp salt

Soak oatmeal in boiling water. Meanwhile, cream butter and sugars. Stir in oatmeal.

Sift together dry ingredients; stir into oatmeal mixture. Turn into greased

and floured 9X13 pan. Bake at 350° for 30-35 minutes or until knife comes out clean in the center. Cool in pan.

Spread with topping and broil for about 1-3 minutes or until golden brown. Watch

6 Tbs. butter

1/2 cup sugar

1/4 cup cream or evaporated milk

1 cup flaked coconut

1 cup chopped walnuts

1/2 tsp vanilla

-Combine all ingredients, except vanilla in a saucepan. Heat until bubbly;

stir in vanilla.
