Cause many of you have asked me the recipe for venison in Barolo sauce. I propose this delicious dish cooked on Japanese magnolia japonica leaves ! Of course the presentation of the dish is beautiful and well-kept (aesthetically speaking) pity that when it is served it's raw, and you should cook virtually alone (you are ruining the aesthetics of the pot) The meat is served on a cooker of earthenware with candles inside! A kitchen that differs from other Japanese kitchens is to Takayama, in the Hida region, in central highlands, since the area for the particular conformation of the territory, it remained very isolated. Mountains almost impenetrable have isolated the area and have contributed to the formation of a lifestyle and a culture of life. Ovviamente la presentazione del piatto e bellissima e curatissima (esteticamente parlando) peccato che, quando e servita sia cruda, e tu te la debba in pratica cuocerla da solo (sei tu a rovinare l'estetica del piatto) La carne e servita su un fornello di coccio con le candeline dentro! Una cucina che si discosta dalle altre e quella di Takayama, nella regione di Hida, nelle highlands centrali, in quanto la zona, per la particolare conformazione del territorio, e rimasta molto isolata. Montagne quasi impenetrabili hanno isolato il territorio e hanno contribuito alla formazione di uno stile di vita vita e a una cultura particolari. Mancando quasi completamente terra da coltivare, gli abitatiti divennero bravissimi intagliatori di legno e allevatori di bachi da seta. Tra i piatti tipici il san sai ryori, un misto di verdura selvatica e ayu (un pesce di acqua dolce simile alla trota) ai ferri insaporito da erbe spontanee; l'hoba miso, verdura grigliata su un letto di riso, servita in una foglia di magnolia, e i mitarashi dango, gnocchetti di riso alla piastra conditi con una salsa dolce. Tra i cibi piu strani e, secondo alcuni, piu difficili per noi occidentali vi sono alcuni piatti di Matsumoto, nei pressi delle cosiddette Alpi giapponesi: gli Hachinoko, larve di api, gli Inago, grilli, il ba sashi, cioe il sushi di carne di cavallo. ********************************************************************

Cream of Mushroom Soup with Wild Rice Blend
Vegetarian (dairy); Gluten-free. Melt 3 Tb butter in a saute pan. Add 3 Tb brown rice flour. Heat, stirring, until it is blended and bubbling, and lightly browned. Add, slowly, stirring out the lumps as you go, 6 cups whole milk. When it has thickened pour it into a large pot and set aside. Saute 3 inches of chopped leek or 1 small onion, 1 diced carrot, and 1 diced celery stalk. Add to the pot. Saute 4 cups (or more if you have them) roughly chopped fresh mushrooms until softened and add those to the pot. Place pot over low heat and cook, occasionally stirring, being careful not to let it boil! Longer, slow cooking is better for getting flavor into the broth. Season to taste with salt and white pepper. In another pot or in a rice cooker, cook 1 cup (raw) of some good rice. We used Lundgren Wild Rice Blend, called "gourmet" but available in supermarkets. When the rice is done and the soup is ready, stir the rice into the soup and serve. When re-heating leftovers, do not bring this (or any cream soup) to a boil. This soup is very basic. More things could be added: diced smoked turkey or ham, a few green peas for color, garden herbs for flavor variety, smoked paprika as garnish are some examples.
