cauliflower "potatoes" for church potluck
September 22, 2006 - I made these last week and they were a big hit! 20 oz. cauliflower, 8 oz. softened cream cheese, 8 oz. shredded cheddar cheese, 3 small chopped onions. Add salt and pepper. Top with paprika. Bake at 350 for about 30 minutes (give or take). I use frozen cauliflower and onions. Cook and mash cauliflower, then mix in other ingredients and bake. Really simple, tasty, and low-carb!
Low Carb Bacon & Eggs
Here's a typical breakfast for a low carb dieter. A cheese omelet, and bacon, with a cup of coffee. I added cream and one packet of Splenda to the coffee, as well as a splash of brandy flavoring. Yum!
