Not sure who said that. W.C. Fields? Anyway, to make up for today's lack of interesting photography, here is my totally bastardized recipe for Chicken Tikka Masala. The final product has little in common with the traditional Indian dish, but it's delicious. Addendum: Now that I think I about it, this is so unlike traditional Chicken Tikka Masala that it should have a new name. I hereby christen this dish: Chicken Tikka Molecule. INGREDIENTS 1 bottle white wine, like a pinot grigio or something. No chardonnay. Chardonnay sucks. 1 cup plain yogurt 1 tablespoon lemon juice 4 teaspoons ground cumin 1 teaspoon ground cinnamon 2 teaspoons cayenne pepper 2 teaspoons freshly ground black pepper 1 tablespoon minced fresh ginger 4 teaspoons salt, or to taste 3 boneless skinless chicken breasts, cut into bite-size pieces 1 tablespoon butter 4 cloves garlic, minced 1 or 2 jalapeno peppers, minced 2 teaspoons paprika Some salt 1 (8 ounce) can tomato sauce 1 cup heavy cream DIRECTIONS 1. Open the wine. Have a drink! 2. In a large bowl, combine yogurt, lemon juice, 2 teaspoons of the cumin, cinnamon, cayenne, black pepper, ginger, and 1 or 2 teaspoons salt. Stir it up into a paste. Stir in chicken so that it's good and coated, cover, and place in fridge. 3. You've worked so hard. Sit down and have a drink. Let the chicken marinate for an hour while you relax and listen to Kruder & Dorfmeister or something. 4. Melt butter in a large heavy skillet over medium heat. Saute garlic and jalapeno for a minute or two. Stir in remaining 2 teaspoons cumin, paprika, and 1-2 teaspoons salt. Stir in tomato sauce, then cream. Simmer on low heat for a few minutes. This is a good time to refresh your drink. 5. Add the chicken and simmer for 20-30 minutes, until chicken is cooked. Start a pot of basmati rice about 20 minutes before you expect the chicken to be done. 6. Ladle chicken and sauce over the rice and enjoy. And while you're at it, why not have a drink! NOTE: This dish is very spicy. Like "make you sweat out the crown of your head" spicy. Those who don't like spicy food should probably omit the jalapeno and maybe halve the cayenne pepper. And have a drink while you're at it.

Made this for dinner tonight. My twist on Moules Marinieres. These are New Zealand Greenshell Mussels that came in the half shell so to make up for a lack in tasty mussel juice, I just tapped into my bag of reserve shrimp shells that I keep in the freezer (really, everyone, buy shrimps whole and clean em yourself, the shells come in handy like this) to make a quick shrimp broth with some water, white wine, salt, and a bay leaf. I sweated some minced shallots and garlic in a pat of butter with some Sel de l'Ile de Re and black pepper. Added some white wine from an open bottle I had in the fridge, and strained the shrimp shell broth into the same pot. Brought the pot to a boil and added the mussels and covered, reducing heat to low. Simmered for a while, stirring periodically, then I arranged the mussels on a shallow bowl, reserving the simmering liquid. I then added some "creme fraiche" (not really creme fraiche, actually just nonfat sour cream, I cheated), white truffle oil, diced ripe red Brandywine tomatoes, and chopped parsley and reduced until it coats the back of a spoon. Seasoned with salt and pepper to taste and poured over the mussels. It was served with a loaf of crusty roasted garlic French bread from La Brea Bakery for dipping. This was just ridiculously tasty and rich.
