i walked out the front door to milk the goats at 7:30am and the shock of freezing rain hit my face. it's august not october i thought. last month was day upon day of sauna in a desert temperatures (40°C for weeks). i ran back inside for a third layer this time a thick fleece hoodie and thought crap this is what fall and winter are going to be like each day. i trudged to the garden where striptease and oasis are penned, i was looking at the ground to avoid getting pelted in the face with this bizarre cold rain and i suddenly looked up to the horizon of the hillside and there was a rainbow dividing the sky up in two. one side rain and the other bright sun. the old gals were basking in the sun and neighing to me to empty their bulging udders, tout de suite! i decided it was a good day to bottle their milk into some golden goodness: cajeta. dulce de leche, confiture de lait, caramel what ever you want to call it. (ps everyone says you cant can caramel so it will have to go into the freezer for us) Cajeta (Mexican Caramel Candy) * 3 quarts goat milk * 2 tablespoons cornstarch * 3 cups sugar * ? teaspoon baking soda Dissolve baking soda and cornstarch into 1 cup milk. Stir well to dissolve any lumps. Add rest of milk and add sugar. Bring mixture to boil, stirring constantly while cooking. Cook until the mixture is thick and looks like caramel sauce. Stir regularly until the milk comes to a simmer and sugar is dissolved. Adjust heat so that the mixture is simmering briskly but not boiling. Cook, stirring regularly, until the mixture turns pale golden, about one hour or two... the entire process was four hours for me and a lot of stirring, but i was cooking and cleaning at the same time. You will now need to stir the milk more regularly as it begins to thicken and turns a caramel-brown color. Don't allow the milk to stick to the bottom of the pot. You can drop a few drops into a small glass of water. If a soft ball forms, the cajeta is ready. If you take the pot off the heat and allow the cajeta to cool, it should be a medium-thick sauce. If it's too thick, add hot water, 1 tablespoon at a time until it is the proper consistency. If it is too thin, return to the heat until it thickens. Pour into jars, cool, and refrigerate. This makes a great topping for ice cream, crepes, pound cake, cheese cake, turtle bars, granola, dipped strawberries and pears, it and makes a delicious carameled apples, fillings for chous, and homemade caramel macciatos!
