I attended the Women's Ministry monthly meeting at The Rock Church today. It was a multi-function meeting. We ate brunch foods that the ladies had brought: sausage/cream cheese/salsa dip with tostito chips, fruit (pineapple, apples, raisins, walnuts, strawberries, kiwis, watermelon, cantaloupe, honeydew, grapes, orange juice), frittata, raisin bread, and coffee. Next we ministered to three people who came by the church stating that they were trying to get home, had some money for a motel, but needed some more money. Then we listened intently as one member, Rebecca B., told us "her story." It was very touching, and the ladies could empathize with her experiences. Next a lady came with some products to share that help with weight-loss. Some products were to take internally, and others were to be worn externally under the street clothes. Irma was one of the models. While listening and watching, the ladies worked together to tape labels onto water bottles in preparation for our portion of the morning service tomorrow. Then we practiced our skit, written by Melanie S., that we'll be performing for the congregation tomorrow. Most people left at that time. The remaining ladies built the props for the skit. Then I came home and made this delicious chicken fajita.

CLEAN EATING MAGAZINE Spring 2008 Serves 6 Ingredients: 2 c cubed, cooked skinless turkey breast 1 10 oz pckg frozen peas 1 c chopped celery 1 8 oz can sliced water chestnuts, drained 2 T chopped green pepper 1 T chopped onion 1 10 3/4 oz can reduced-fat, reduced-sodium, condensed cream of chicken soup 1 c (4 oz) shredded low-fat cheddar cheese 1/4 c skim milk 2 T fat-free chicken broth 1 T lemon juice 1/2 t sea salt 2 slices whole wheat bread, cubed Instructions: Preheat oven to 375. In large bowl, combine the first six ingredients. In a small saucepan, combine the soup, milk, 1/2 cup of cheese, broth, lemon juice, and salt. Cook and stir over low heat until smooth and heated through. Pour over turkey mixture and toss to coat. Transfer mixture to a baking dish coated with nonstick spray and top with bread cubes. Bake uncovered for 25 minutes. Sprinkle remained 1/2 cup cheese on top and bake another 5 minutes or until cheese is melted. NI: Calories: 248; Fat: 7 g; Carbs: 22 g; Protein: 24 g CLEAN
