12 Quiche After
Quiche, Julie-style This is a good low carb dish, but if you have a root beer float for dessert, this will negate the low carb effect. Ingredients: A deep dish pie crust, store bought or home made Seven or eight large eggs, Milk, about a cup Sausage, about a cup Broccoli florets, about a cup Shredded cheddar cheese, whatever I’m not very clear on the amounts because I’m one of those cooks who never measures. When I’m being careful, I start by cooking the bottom of the piecrust, so it doesn’t end up soggy. When I’m not, it usually turns out okay, anyway. Brown the sausage. Drain the fat off. Put the sausage, the broccoli florets, and cheese in the piecrust shell. Mix the eggs and milk. (Some people use cream instead of milk, but I think it tastes fine with milk.) Sometimes I add some chicken bullion powder to the eggs, but not much because the eggs get most of the flavor from the sausage and cheese. Pour the egg/milk mixture carefully over the sausage, broccoli and cheese, a little at a time, giving it time to sink in, or it will overflow and make a big mess. Believe me. I know. You can save yourself some cleanup if you put tinfoil under the quiche. It usually overflows in the oven. Unfortunately, I was all out of tin foil, so I just had to use cookie sheets. Cook in the oven at 350 for approximately 45 mins, or until the center of the pie is firm. Allow the pie to set for 5 to 10 minutes and cool.Meaty-Egg-Pie
