Oven Pancake For One with Berries and Greek Yogurt - with recipe
I got this recipe from my friend Marisa. It uses garbanzo bean flour instead of wheat flour, which gives a boost of protein while also being lower on the glycemic index. Her recipe serves two, but there is only one of me at Chez Jen, so I cut the recipe in half. It also calls for using the blender - but with the recipe cut in half, I thought it would work okay if I just whisked everything together really well...and yep, it worked okay! Ditto using a medium-sized glass casserole dish - if I'd used my skillet (I don't have a smallish one), I think the batter would've been spread too thinly over too large a surface - which might've meant burning, or at least not puffing up much. Anyway, here is the 'for one' recipe: Oven Pancake 2 tablespoons butter 2 eggs 1/4 cup milk (or substitute) 1/4 cup garbanzo flour 1/4 teaspoon salt (feel free to skip it, if you think the butter will be salty enough for you) Place butter in an 8 - 9inch casserole and put into oven heated to 400 degrees F. Crack eggs into a bowl and add the milk. Whisk until very well mixed . Add flour and salt (if using) and whisk in until smooth. Remove casserole with melted butter from oven, pour in pancake mixture, and return to oven. Bake until puffed and golden (10-12 minutes). Remove to a plate, and serve with fresh fruit, or whatever suits your fancy. Me, I put fresh blackberries and fresh sliced strawberries on top, with a nice dollop of Greek yogurt that had been lightly sweetened with a little honey. Mad easy, and very yummy. Note: When you buy garbanzo flour, keep the opened bag in the freezer, tightly closed (or transferred to a plastic container with a tight-sealing lid) - it stays fresher this way.
Chicken Pot Pie Recipe
Please send a death card to my girlfriend, as bad as that sounds. In return, here is a great chicken pot pie recipe. It's enough for 2 pies. INGREDIENTS 2 pie shells plus 2 pie crust rounds 2 lbs chicken breast, parboil until cooked through but not tough, save the water bag of Birdseye mixed veggies 3-4 T flour 1 onion, chopped 1-2 packets chicken boullion powder stick of butter celery seed 1 egg, divided a little milk & sugar 1. Using a pastry brush coat the two pie shells with egg yolk mixed with a wee bit of water. Bake for ~ 10 minutes at 350 degrees. 2. Cut up the chicken into bite-sized bits. 3. Att 4T butter to a skiller. Once it has melted, add the onions. Cook until transparent. Add about 1/2 C of the chicken water, mixing constantly over low heat. 4. Mix about 2 T cold water with 2 T flour, mix thoroughly and then add it slowly to the roux, mixing with a beater over very low heat. Add more chicken water if necessary. 5. Once it is thickened, add the roux to the chicken. Add the veggies and the boullion. Stir stir stir. 6. Pour the mixture into the two shells. 7. With a rolling pin, roll celery seed into the two uncooked pastry crusts. 8. Cover the two pies, sealing the edges. 9. Cut a few holes in the tops of the pies. 10. Mix 1 T milk with the egg white. Using a pastry brush, coat the crusts. 11. Sprinkle about 1 T sugar into each crust. 12. Bake 1 pie for ~ 45 minutes at 350 degrees. 13.
