Tea and Oatmeal cookies - these cookies are ridiculously easy to make. To make the cookies: heat the oven to 190° C. In the meantime melt 100 g butter in a small saucepan. Measure out 100 g oats and mix with the butter. Add an egg and whisk. In another bowl combine 150 g sugar, 1 tablespoon plain flour and 1 teaspoon baking powder. Mix all the ingredients well. Place little scoops of dough on baking sheets, using two teaspoons. Leave a lot of space between as the cookies will spread while baking. Bake in the middle of the oven for 5-10 minutes until done - the cookies will spread and rise, then collapse again. They are done when they turn a light golden brown. Remove from the oven and place on a rack to cool - the cookies will become crisp as they cool. In no time at all you have crisp and lacy cookies with chewy oats - yum!

Makes 10 7-cm diameter cookies. Ingredients: ? cup slivered almonds, toasted 1/3 cup butter, softened ? cup white sugar ? cup brown sugar 1 tsp vanilla essence 1 egg 2 large strawberries, diced 30g white chocolate, roughly chopped 1 tbsp dried cranberries, plumped in hot water for 10 mins 1 cup plain flour, sifted ? cup self-raising flour, sifted ? tsp baking powder, sifted Directions: 1. Preheat oven to 190°C, grease baking sheets. 2. In a large bowl, mix almonds, butter, white sugar & brown sugar until creamy. 3. Mix in vanilla essence and egg. 4. Stir in strawberries, white chocolate & cranberries. 5. Stir in flours and baking powder. 6. Drop rounded tablespoonfuls of dough onto baking sheets, bake until golden brown (about 15-20 mins).
