We often have breakfast for dinner. My son was helping me cook and wanted to add things to our pancakes. When all we had to add was food coloring, we wound up with a very colorful dinner! But this reminds us that variety is so important when it comes to diabetes. Because if you get stuck in a rut, it can be pretty ugly. A simple, small change--like having purple pancakes instead of regular vanilla-colored pancakes--can make a big difference. (OK, no comments about how I shouldn't be having pancakes to begin with!)

I made this for a Good Friday Dinner I am going to, tomorrow. I used my New York sy tyle cheesecake recipe but modifies it a bit. I added a 1/4 teaspoon of almond extract , 1/4 cup of finely chopped almonds, 1/2 a cup of shredded coconut, and 1/2 mini semi-sweet chocolate chips to the batter. I topped it with more coconut and almond slices before baking. I called it my "Almond Joy Cheesecake". I don't know how it taste - since I have diabetes I can't eat this stuff so I make it for friends.
