Pumpkin Cheesecake Serving Size : 16 1 1/2 cups graham cracker crumbs 5 tablespoons butter -- melted 1 tablespoon sugar 1 cup sugar 24 ounces cream cheese -- softened 1 teaspoon vanilla 1 cup canned pumpkin 3 large eggs 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon allspice Preheat oven to 350 degrees Make crust by combining melted butter, graham cracker crumbs and 1 tablespoon sugar. Stir well enough to coat of of the crumbs but not so much as to turn the mixture into paste. Keep it crumbly. Press crumb mixture onto the bottom and about 2/3 of the way up the sides of the pan. Bake the crust for 5 minutes, then set aside until ready to fill. In a large mixing bowl combine cream cheese, 1 cup sugar, and vanilla. Mix with an electric mixer until smooth. Add the pumpkin, eggs, cinnamon, nutmeg and allspice and continue to beat until smooth and creamy. Pour filling into the pan. After meeting in Uchisaiwaicho, Tokyo, I came back to Kudan to make our plan. One of our team mates brought cakes for the next plan. Weight of these two cakes were 70 grams and may be 280 kcal.Cakes were served with a coffee of a combination of beans from Zambia and Brazill.
