Granola
Granola
I've made this as a gift for lots of people, everyone loves it! You can eat it by the hand full, sprinkle it over some yogurt, or pour on some milk and eat it like cereal. Makes about 10 cups 4 cups old-fashioned oatmeal (not instant) 2 cups sweetened, shredded coconut 1 cup sliced almonds 3/4 cup vegetable oil 1/2 cup honey 2 cups dried fruit (I use Sun Maid Tropical Trio with pineapple, papaya and mango) 1 cup pine nuts Preheat the oven to 350 degrees. Toss the oats, coconut, and almonds together in a large bowl. Whisk together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Pour onto a 13x18 inch baking sheet. Bake, stirring every 15 minutes with a spatula, until the mixture turns a nice, even golden brown, about 45 minutes. Meanwhile, toast the pine nuts. Place the nuts in a small, dry saute pan over medium heat and cook, tossing often, for about 8 minutes, until light brown, set aside. Remove the granola from the oven and allow to cool. Add the dried fruit and pine nuts. Store the granola in an airtight container. Tips: If you're cutting this recipe in half, take 12 to 15 minutes off of the baking time. You can use whatever kind of dried fruit you like. I've used blueberries, cranberries and strawberries in the past, and it's just as yummy!
