Continuing with the under-500 calorie dinners, I made a steak and spinach dish that turned out pretty good. I used white rice because I found that I had run out of brown rice (thought I had another box). Here you go, hope you like :-) Ingredients 1/2 c. Instant brown rice, uncooked 1/2 c. flour 1/2 tsp. kosher salt 1 tsp. black pepper 2 Tbsp. A-1 steak sauce 1/2 lb. extra-lean sirloin strips 1 Tbsp. EVOO 2 cloves garlic, minced 1/2 c. thinly sliced onion 1 C. spinach, chopped 1/2 c. beer chopped cilantro for garnish Directions Cook the rice according to the directions. In a small bowl, combine the flour, salt and pepper (for a little extra heat, add a tsp. of chili powder or cayenne). Pour the steak sauce into a shallow bowl and dip the sirloin in it. Toss the sirloin in the flour mixture, then shake off all the excess. Place the dusted sirloin strips on a plate or dish. Heat the oil in a large nonstick skillet (or wok), over medium high heat. When the oil is hot, add the sirloin, garlic and onion. Brown over medium high heat for about 8 minutes. Add the spinach, and let the dish cook for another 2 minutes. Add the beer and simmer for 5 minutes. Serve over the rice and garnish with freshly chopped cilantro. Makes 2 servings. Per serving 415 calories, 20g protien, 34g carbs, 20g fat, 2g fiber, 460mg sodium. Tasty and filling.Beef and Vegetable Kebabs
COOKING LIGHT 1 pound boneless sirloin steak, trimmed and cut into 1-inch cubes 8 (1-inch) pieces yellow bell pepper (about 1 pepper) 8 small mushrooms (about 4 ounces) 8 (1-inch) pieces green onions (about 2) 8 cherry tomatoes 1 teaspoon kosher salt 1/2 teaspoon dried thyme 1/4 teaspoon freshly ground black pepper Cooking spray 2 teaspoons canola oil Preheat broiler. Divide the first 5 ingredients evenly among 4 (12-inch) skewers, and sprinkle with salt, thyme, and black pepper. Place on a broiler pan coated with cooking spray; drizzle kebabs with oil. Broil 10 minutes or until desired degree of doneness, turning once.
