Beer-Braised Beef with Onions & Spinach
Continuing with the under-500 calorie dinners, I made a steak and spinach dish that turned out pretty good. I used white rice because I found that I had run out of brown rice (thought I had another box). Here you go, hope you like :-) Ingredients 1/2 c. Instant brown rice, uncooked 1/2 c. flour 1/2 tsp. kosher salt 1 tsp. black pepper 2 Tbsp. A-1 steak sauce 1/2 lb. extra-lean sirloin strips 1 Tbsp. EVOO 2 cloves garlic, minced 1/2 c. thinly sliced onion 1 C. spinach, chopped 1/2 c. beer chopped cilantro for garnish Directions Cook the rice according to the directions. In a small bowl, combine the flour, salt and pepper (for a little extra heat, add a tsp. of chili powder or cayenne). Pour the steak sauce into a shallow bowl and dip the sirloin in it. Toss the sirloin in the flour mixture, then shake off all the excess. Place the dusted sirloin strips on a plate or dish. Heat the oil in a large nonstick skillet (or wok), over medium high heat. When the oil is hot, add the sirloin, garlic and onion. Brown over medium high heat for about 8 minutes. Add the spinach, and let the dish cook for another 2 minutes. Add the beer and simmer for 5 minutes. Serve over the rice and garnish with freshly chopped cilantro. Makes 2 servings.
