Made some eggless low-fat muffins today - green tea with adzuki beans, chocolate chip walnut and apple cinnamon. They came out pretty good, except that I wish there was more punch [I needed an egg maybe]. I guess I shouldn't expect much as these are supposedly healthy treats. Green Tea Muffin Recipe • 2 Cups Whole Wheat Pastry Flour • ? Cup Granulated Splenda or Equal • 2 teaspoons Baking powder • 1 teaspoon Baking Soda • 4 teaspoons green tea powder • 1 Cup (8 ounces) Low-Fat Yogurt • ? Cup Low-Fat Milk • 2 Tablespoons Canola Oil • 1 Tbsp Vanilla essence • 1/2 cup adzuki beans, cooked Preheat the oven to 350 degrees Fahrenheit. Combine the flour, green tea powder, sugar, baking powder, and baking soda in a mixing bowl and stir together. Make a well in the center of the flour mixture and pour in the remaining ingredients. Stir together until well blended, but don’t over beat. The batter should be medium-thick. If it seems too stiff or dry, add a small amount of additional milk. Spoon batter into 12 oiled or foil-lined muffin tins. Bake for 20 minutes, or until the tops of the muffins are slightly golden and a toothpick inserted into the center of one comes out clean. Let cool until just warm to touch, then transfer muffins to a plate.Banana Molasses Mini Muffins
Make batter according to Lower-Fat Banana Bread recipe from Veganomicon. Divide into two greased mini muffin pans (24 mini muffins). Optionally top with chocolate chips or whole walnuts. Bake at 350 for 14 minutes. I REALLY like to eat these with a schmear of peanut butter so I might try to find a peanut butter frosting recipe. I want to call these Bananamols (sort of sounds like animals), but no one else seems to thnk it's such a brilliant name.
