"I Made This........130" I have been doing a form of mango salsa since back in my Doubletree days, but had not done one ever at my current employer. So I put it on the specials sheet this week, with your choice of ahi tuna or salmon. Tonight I see a commercial for Outback Steakhouse, and they are offering fish with a mango salsa. Hmmm..... Anyway, I use mangos that are already sliced and in a mango juice. You can use fresh mangoes, but you will also need to purchase some mango juice to add with the mangos. Chop the mangos. Dice red onion. Dice red bell pepper. Dice some jalapeno if you like. Chop cilantro. Combine it all together and add some mango juice until it is the consistency you like. Top it on fish or chicken. Low calorie, and yum! Oh, since I first made this, I added a touch of lime juice and the zest of one lime. Replacing the cilantro with mint is also highly recommended. It marries perfectly. Or use both.

I made this for dinner for myself and my fiance the other night. It's tuna and corn simmered in cream of mushroom soup (with roasted garlic, mmm!), served over fresh rice. It's not the prettiest dish, but it's cheap, fairly lo-cal, and oh-so-filling. Added bonus: I can actually cook it myself! (650 calories, by the way, and so much I nearly couldn't finish it. Ingredients can be combined in any way you want, but I used a cup of rice - dry, a full can of tuna, a full can of Campbell's condensed cream of mushroom... I didn't add water... and an average can of green giant corn and split it evenly between two people.)
