I try to stay away from flour and sugar. In fact, the only real processed ingredients I eat are sugar substitutes. (I can't go completely sweets free; that would be hell.) I try to use good sweeteners for baking; they have a symbiotic relationship, so it's good to use xylitol and Splenda together, for example.Low Carb Salmon Patties
A few months ago, I bought some coconut flour to use as a white flour sub. It tastes, of course. like coconut, so anything you bake using it will have to get along with that flavor. Today, I made a simple muffin.
Preheat the oven to 400°. Spray a muffin tin with non-stick cooking spray.
· 3 eggs
· 2 T melted butter
· 1/4 t salt
· 1/4 t vanilla
· 5 T half-and-half or milk or coconut milk
· 5 T sweetener (sugar, if you can; otherwise, 1/2 xylitol, 1/2 Splenda)
· 1/4 t baking powder
· 1/3 C coconut flour
Mix until incorporated and free of lumps.
Add 1/4 cup nuts (I used almonds because I had no pecans on hand).
Pour into six bowls of a muffin tin, and bake for 15 minutes. Cool briefly, then pop out muffins.
These are tasty on their own or with butter. As with all low-carb cooking, you have to get used to the spongy, rather than cakey, texture. These are very much like little custards, a bit eggy in that respect, but I like them.

I tried a new recipe last night. I made salmon patties, by using a small can of salmon, one egg, and 1/3 cup whole ground flax seed meal (instead of flour). I fried them in olive oil, turning them over occasionally. They turned out pretty good! (My hubby even liked them.) I put a half a slice of lowfat american cheese on each patty, and it added a nice flavor. The veggies on the plate are green beans, and a mix of tomatoes and okra.
