(Taken from "The Eat Clean Diet Cookbook"; Tosca Reno) Ingredients: 6 lean chicken breasts, boneless & skinless, or if vegetarian, use tofu, cut in 1" cubes 1 T EVOO 1 large onion peeled & chopped 1 large carrot peeled & chopped 2 ribs celery, including leafy greens, chopped 1/2 cup fresh basil, chopped 2 t dried oregano leaves 4 cloves garlic, passed through garlic press 8 Roma tomatoes, chopped 1 medium sweet potato, baked 1/4 c low-sodium chicken or vegetable broth 1 10 oz package brown-rice rotini pasta (I subbed Barilla plus) Preparation: 1. Cut chicken breasts into thin strips. 2. In large skillet, heat olive oil over medium heat. Add onion, carrots, and celery and cook until they become soft but not brown. Add herbs and garlic and continue cooking for 2-3 minutes. Add chopped Roma tomaties and sweet potato pulp along with broth. Add chicken strips and increase heat until mixture comes to full boil. Reduce heat and cover tightly. Let simmer for 20 minutes. 3. Meanwhile, in a large saucepan bring 6 quarts to a full boil. Add a pinch of salt and a splash of olive oil to the water to prevent pasta from sticking. Add pasta and cook al dente. Drain and return to the pot. 4. Add tomato sauce to pasta and mix until all ingredients are combined. (Shown with a bit of reduced fat parm topping.) March 26, 2007 - Pretty good. Would have been better if I would have added cheese. I also picked out the corn in it since I don't eat corn. It does not come with the tortilla. This is a low-carb one I bought. The meat-looking pieces are tofu, which I don't mind because I like tofu. :)
