Blueberry & Raspberry Pie My first attempt at a fruit pie. Came out pretty good I thought, though Mom found my spicing combination to be "interesting" Blueberry & Raspberry Pie Recipe: Ingredients * 2 Frozen deep dish crusts * 1 cup sugar (Half white sugar, half splenda) * 1/4 cup cornstarch * 1-2 teaspoon grated orange peel * 1 teaspoon vanilla extract * 1/4 teaspoon ground Jamaican allspice * 1/8 teaspoon ground Garam Masala * 1/8 teaspoon ground Clove * A touch of salt * 2 cups fresh blueberries * 3 cup fresh raspberry * Some Sloegin Directions 1. In a pot on the stove, simmer fruit with vanilla extract, spices, and enough sloe gin to cover the fruit. I actually used half sloe gin, half water. Simmer and reduce. 2. Once the liquid has reduced some, pour the liquid in a second pot. Add the sugar and stir until dissolved. Slowly add the cornstarch and whisk until dissolved. Pour this combination over the fruit and stir gently to combine the ingredients. This should be slightly thick. 3. Pour contents carefully into the frozen crust. Use the second crust to make a hatch covering, or a full cover with slits in it. (Note: Plain pastry dough would have been easier to use than a manipulated pie crust.) Be sure to trim and press down the edges. 4. Bake at 350° for 45-55 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack. One pie serves 4-6 people. Estimated to be around 175 calories a slice.
